meet the chefs

Melissa Martin

Growing up in a family of fishermen in Chauvin, Louisiana, Melissa was steeped in Cajun tradition. In a home with five siblings, family meals were a mainstay for breakfast, lunch, and dinner. On Sundays, extended family (many of whom lived on the same street) would share a meal, a tradition they still carry on to this day. Over the years, Melissa has made wonderful relationships with fishermen and oyster purveyors from Louisiana and across the rest of country, in addition to harvesting some herself.

2018 Louisiana’ Cookin Chef to Watch

A Miami native, Christina Balzebre moved to New Orleans in 2005. She soon fell in love with the cafe culture and found a true passion in the process of baking. She deeply invested herself in learning as much as possible, working in various places throughout the city, while experimenting obsessively at home with bread and desserts. In 2017, in a partnership with Mosquito Supper Club, she began baking out of a beautiful old shotgun house on Dryades Street in the Uptown neighborhood which was converted into a serene restaurant space.

meet the musicians

Three remarkably accomplished young musicians come together in T’Monde, the Acadian phenomenon that Offbeat Magazine has called “a creative fusion of classic country and out-of-the-way Cajun.” With a combined 10 GRAMMY nominations between members Drew Simon, Megan Brown, and Kelli Jones, T’Monde brings influences ranging from early Country music to ancient French and Creole ballads to present day Cajun music. Born out of friendship and a shared love for the music, T’Monde has developed a unique sound that is unmatched in Cajun music today. With their latest album, Yesterday’s Gone, the band showcases their influences and musicanship which makes their sound so special.
