2013 king and queen of louisiana seafood

Food Network's “Cajun Aces” stars Cody and Samantha “Sam” Carroll are the dynamic husband and wife team behind New Orleans’ award-winning restaurant Sac-a-Lait.

Born and raised in the small farmer’s town of Batchelor, Louisiana, Chef Cody Carroll always made time for the kitchen. It was in his family’s hunting and fishing camps, preparing Louisiana game, waterfowl, and fish that his talent and passion for cooking flourished.

Chef Samantha Carroll grew up in the community of Gonzales, located between Baton Rouge and New Orleans in South Louisiana. Her love for the culinary arts stems from waking up on weekend mornings to the distinct scent of roux being prepared in her family’s kitchen for gumbo. To this day, she swears there is no better smell.

Chefs Cody and Samantha focus on sourcing locally and utilize familiar ingredients to create bold dishes inspired by the fishing, farming, and hunting culture they grew up in.

Enjoy the pre-war Jazz stylings from the 20's-30's woven into a melodic tapestry of old and new. Andrea Villien’s warmly resonant vocals will transport you to another time and place and pull on your heartstrings in all the best ways. She is a rising presence on the Lafayette music scene- an eloquent songstress who delivers early Jazz and French and Spanish songs with equal skill. Beginning with classical violin studies from an early age, Andrea soon branched out to the local music scene to absorb a variety of jazz and folk, working as the lead violinist with the ULL classical ensemble, and with local bands such as Sassafras Jubilee, Rio Luminoso, and Cedar Crest Ramblers.
