james beard best chef: south 2010
one of the top 8 latin chefs in the us

Growing up in New Orleans to Panamanian parents, Chef Adolfo has taken old New Orleans seafood and other Creole specialties to another level, infusing them with the Latin American flavor that reflect his heritage and culinary experiences. He is both a culinary traditionalist and pioneer, always willing to experiment and try new recipes yet staying faithful to those specialties that are tried and true.

Blake Kutner

culinary manager
la cocina
san francisco, ca

Blake Kutner has done pretty much everything in the back of the house world from dishwashing to fry station, kitchen managing to grade manger, Mexico to Spain, New Orleans to San Francisco. The life of a rowdy kitchen crew combined with the hand's on gratification of taking a slimy raw product (like chicken or oysters) to glistening deep fried glory started his journey. The intellectual stimulation that cooking provided utilizing biology, physics, chemistry, history and culture has kept him doing it.
